Made Seafood Paella last night for a client, at a catered private dinner party. This is one of my favorite signature dishes. Made with Mahi, wild shrimp, clams, snow crab, lobster, mussels, chicken, chorizo, saffron, white wine, short grain rice, pimentos and lime.
